Everyone does this recipe a little differently, so here’s the version we enjoy…Serves 4 with leftovers
In a large pot, add approximately 1 tablespoon of Rice Bran Oil or Olive Oil. Add chopped onion and stir until starting to soften. Add beef mince and stir gently. Cook until mince has browned gently. Then add enough water to just cover mince. Add chopped carrots. Cook until carrots have started to soften, stirring occasionally. Then mix together in a measuring cup the Gravox, Worcestershire sauce and tomato sauce with a little cold water. Then add this to the beef mince in the pan and stir through. Add salt and pepper to taste. After 10 minutes set the mince aside until the potatoes are ready..
Meanwhile peel the potatoes and boil them in a pot until soft. Then mash them with butter and milk. To assemble the Shepherd’s Pie; you’ll need an oven proof casserole dish, which has been lightly greased with butter. Firstly place all the mince mixture in the base of it, and top with the mashed potatoes. Then sprinkle with the grated cheese. On the very top you may like to place slices of tomatoes or just a few decorative swirls of tomato sauce. Cook in a preheated oven at 180 degrees for 25 to 30 minutes. Serve with cooked greens of your choice
